Coffee Roasting Fundamentals: Flavor Development Via Roasting
Roasting brings out the aroma and flavor found in green coffee beans. Beans are stored in green form, which allows them to be stored without losing quality or taste. Green beans lack the characteristics of roasted beans -- they’re soft and spongy to the bite and smell grassy.
As the beans are rapidly heated to extremely high temperatures during roasting, chemical changes occur. When they reach the pinnacle of perfection, they are immediately cooled to bring the process to a halt. Roasted beans smell like coffee and weigh less since moisture has been removed during roasting. They're crisp to the bite and ready to grind and brew. But, once roasted, they should be utilized as soon as possible before the fresh roast flavor fades.
Roasting stages
Roasting consists of three major stages: drying, browning, and development (or roasting).
1. Drying stage
The humidity of the coffee bean ranges between 8 and 12%. We need to dry it before we begin roasting. The drying stage normally lasts 4-8 minutes with a classic drum roaster. Typically, the temperature at the end of the drying step is 160 0C. You must be careful not to burn the beans by using too much heat at the start, especially with drum roasters.
2. Browning stage
This is the stage at which scent precursors begin to transform into fragrance compounds. Despite the fact that the browning stage follows the drying step, drying continues during the browning stage. The Maillard process, which causes browning, begins during the browning stage. Reducing sugars and amino acids react in the Maillard process, producing hundreds of distinct fragrances and color chemicals called melanonids.
3. Development or Roasting stage
The reaction becomes exothermic, and the coffee cracks at the start of the development stage. The bean has accumulated energy during the drying and browning steps, which causes the coffee to erupt. If we do not slow down the roast throughout the development stage, we might easily create smokey coffee with a strong flavor.
